Healthy Ginger Honey Cinnamon Candy

Caramelized ginger candy

Ginger has some amazing health properties: anti-inflammatory, antioxidant, antibacterial and quite a few more. So does Manuka honey. Science has shown that a controlled heat treatment can improve certain ginger health properties. However, heat is not desirable for honey, so we would like to offer you this “no-heat” candy recipe.

Peel the required amount of ginger root. Slice it into strips about 1/8 inch thick. Mix into Manuka honey (approximately half the volume of ginger) in a mixing bowl. You can use any other honey but Manuka is superior to a regular honey and will work synergistically with ginger. The  next step will require some patience: let it sit for 7-10 days preferably in an open container. Ginger should become totally infused with honey and look amber-ish. Add some honey if it looks too dry. If you are not in a hurry, let it sit for another week or two. Once ready, sprinkle with some ground cinnamon.

If you want to enhance the health benefits then sprinkle some dried ground turmeric too. If the candy is a bit too spicy for you, add some ghee or coconut butter.
